Gorganzola - Red Raspberry Hot Pepper Dip
1 block (8 oz.) softened cream cheese or Neufchatel
2 oz. Gorgonzola cheese, crumbled
1/3 jar Nordic Farms' Red Raspberry Hot Pepper Jam
Blend all ingredients with electric mixer until smooth (there will be small pieces of crumbled Gorgonzola remaining). Cover and refrigerate until well chilled. Serve with crackers, pretzels or toasted party bread rounds.
Cream Cheese Christmas Tree
1 block (8 oz.) cream cheese or Neufchatel, well-chilled
1 yellow, green or red bell pepper
1 piece (2 inches) green onion
1/2 cup (1/2 jar) any Nordic Farms' hors d'oeuvre jam or jelly
1 tsp. chopped fresh Italian parsley or cilantro
crackers, apple slices or sliced veggies
Cut block of cream cheese diagonally in half; arrange on shallow serving plate to form triangle. With small star-shaped cookie cutter or sharp knife cut a star from a piece of bell pepper; place at top of "tree." Place green onion piece at base of "tree" to form trunk. Spoon jam over cream cheese. Sprinkle with parsley or cilantro.
Spicy Pineapple - Cream Cheese Dip
1 block (8 oz.) softened cream cheese of Neufchatel
3 oz. Nordic Farms' Pineapple Pepper Jam With electric mixer combine cream cheese and jam until well blended. Chill for at least a half hour. Stir well before serving. Serve with crackers or celery.
Pumpkin Butter Dip
4 oz. goat cheese or cream cheese, room temperature
3 oz. Nordic Farms' Pumpkin Butter
With electric mixer on high speed whip Pumpkin Butter and goat cheese together until light and creamy. Chill for at least a half hour. Stir well before serving. Serve with apple slices or crackers.
Cream Cheese Crab Dip
8 oz. crabmeat or imitation crab
4 oz. Nordic Farms' Red Hot Pepper Jelly
8 oz. softened cream cheese or Neufchatel
Mix ingredients together. Chill for a half hour or more to blend flavors. Serve with crackers.
Ham, Cream Cheese, and Hot Pepper Jelly Canap's
12 water crackers (such as Carr's)
4 Tbsp. softened cream cheese or Neufchatel
4 Tbsp. finely chopped cooked ham, smoked or plain
2 Tbsp. Nordic Farms' Red Hot Pepper Jelly
Finely chopped fresh chives or Italian parsley for garnish
For each canap', spread a cracker with 1 tsp. of softened cream cheese, sprinkle with 1 tsp. chopped ham, and top with 1 tsp Hot Pepper Jelly. Garnish with a pinch of finely chopped chives or parsley.
This is an old Southern favorite!

Raspberry Dressing with Crumbly Bleu Cheese
1/2 cup good olive oil
1 cup cider vinegar
2 Tbsp. sugar
1/2 cup Nordic Farms' Red Raspberry Hot Pepper Jam
Mix well and serve over favorite tossed salad with crumbly Bleu cheese.
Hot, Hot Pepper Jam and Turbo Charged Jam
Hors d'oeuvres idea: serve over cream cheese on a cracker or mix jam with cream cheese and use as a dip.
Try a little jam on top of a good Cheddar cheese and/or beef stick on a cracker to give it a little ZIP!
Use as a ham glaze or serve with steak for roast beef. Also good with grilled veggies.
Cranberry Horseradish Jam Serve over Brie cheese - warmed or cold. It is also great served as a compliment to chicken or turkey, or on cooked carrots.
Cranberry Horseradish Grill
Spread Nordic Farms' Cranberry Horseradish Jam generously on slice of sourdough bread. Add one ounce of good deli turkey; a slice of cheese - American or Provolone; top with another slice of sourdough bread. Butter the top and bottom of sandwich and grill on griddle or skillet. Cook over medium heat untill cheese begins to melt and bread is golden brown.
Zippy Salad Dressing
1/2 cup canola oil
1 cup vinegar
2 Tbsp. sugar
1/2 cup Nordic Farms' Cranberry Horseradish Jam
Mix ingredients well; serve over your favorite tossed salad.
Onion Jelly
Great addition to a weekend breakfast, serve on whole grain toast with fried eggs.
Use as a glaze on meats or serve with meat as you would mint jelly with lamb.

Horseradish Jam
Great as an hors d'oeuvres on a cracker. Serve with roast beef or venison like you would mint jelly with lamb. Has the full flavor of horseradish without the heat.
Apricot Glazed Chicken
Marinate chicken breasts in Italian dressing for at least 2 hours before cooking. Preheat oven to about 350 degrees. Baste with Apricot Jam and pop in the oven. Chicken should take about an hour to cook. Baste intermittently throughout the hour, till rich golden brown.
Flavored Fish
Instead of tartar sauce with fish, try a spicy dipping sauce made with marmalade or peach jam and prepared hot mustard.
Sweet-N-Sour Sauce Combine 1/2 cup of jam, 2 Tbsp. soy sauce, 1 Tbsp. Worcestershire sauce and 1/2 cup wine vinegar. Simmer 5 minutes, stirring constantly. Spread over chicken, pork, rice, and vegetables.
Veggie Pizzazz
Mix sweet potatoes or carrots with 1/4 cup of apricot or peach jams.

Brie in Puff Pastry with Cranberry Horseradish Jam
1 sheet frozen puff pastry (half of package), thawed
1 Baby Brie cheese (about 6 to 7 inches in diameter)
1/2 cup Cranberry Horseradish Jam
1/4 cup pecans, chopped (optional)
1 large egg, lightly beaten for glaze
Preheat oven to 400 degrees F. Roll out pastry on lightly floured surface to 12-inch square. Place cheese in center of pastry. Spoon Cranberry-Horseradish Jam onto top of Brie; sprinkle with chopped nuts. Fold pastry on 2 opposite sides over cheese. Brush remaining 2 sides of pastry with egg glaze. Fold over cheese; press seams to seal. Brush pastry with glaze; place on baking sheet.
Bake cheese until pastry is golden brown, about 25 minutes. Let cool 20 minutes. Place baked Brie on serving platter. Surround with good crackers, baguette slices and/or apple slices.
*This is also a great recipe to use with our Red Raspberry Hot Pepper Jam, Apricot Jam or Fig Jam. Or, try it with Peach Jam and sliced almonds for summertime entertaining.
Cream Cheese Coffee Cake Braid
3 oz. cream cheese or Neufchatel
4 Tbsp. butter
2 cups biscuit mix
1/3 cup milk
1 cup Nordic Farms' jam of your choice
Cut cream cheese and butter into biscuit mix and add milk. Knead by hand 8 to 10 strokes. Roll dough on wax paper into 12" x 8" shape. Turn onto greased cookie sheet or jelly roll pan. Spread jam down center of dough. With a sharp knife, make 2" long cuts at 1" intervals along the long edges of the dough. Fold strips over filling. Bake at 425 for 12 to 15 minutes. Drizzle with icing.
Icing: 1 cup confectioners' sugar; 1 -2 Tbsp. milk; 1/2 tsp vanilla. Whisk together.
*This recipe, a family favorite, comes from ny mother. When my boys were young I made this for Christmas morning breakfast.
Strawberry Cheesecake Brownies
1 (19.5 oz.) package brownie mix
1/2 cup canola oil
1/4 cup water
4 large eggs, divided
3/4 cup chopped nuts (optional)
2 (8 oz.) blocks cream cheese, softened
1 (14 oz.) can sweetened condensed milk
1/3 cup lemon juice
1 tsp. vanilla extract
1/2 cup Nordic Farms' Strawberry Jam
Heat oven to 350 degree F. Spray a 13x9-inch baking dish with cooking spray. Combine brownie mix, oil, water and 2 eggs in large bowl; stir 50 strokes with spoon. Stir in nuts. Spread into pan. Bake 20 minutes.
Beat cream cheese in large bowl until fluffy. Gradually beat in sweetened condensed milk. Mix in remaining 2 eggs, lemon juice and vanilla until smooth. Pour evenly over warm brownies.
Stir jam until smooth. Drop by teaspoonfuls over surface of cream cheese mixture. With a knife, swirl jam gently through mixture to create marble effect. Bake additional 35 to 40 minutes or until top is lightly browned. Cool 1 hour. Loosely cover and chill in refrigerator for 2 hours or more. Cut into bars.
Raspberry Chocolate Chip Bars
2 sticks butter, softened
1 tsp. vanilla extract
2 cups flour
1/4 cup brown sugar
2 cups chocolate chips, divided
1 can (14 oz.) condensed milk
1/4 cup Nordic Farms' Chocolate Raspberry Jam
Preheat oven to 350 degrees; grease a 12" x 8″ pan. In a large bowl, beat butter and vanilla until smooth. In a small bowl, whisk together flour and sugar. Beat the flour mixture into the butter mixture. Press 2/3 of the dough mixture into the pan, reserving the remaining third. Bake about 10 minutes or until the crust turns light brown. Let cool somewhat.
In a sauce pan over medium heat, melt half of the chocolate chips with the condensed milk. Spread jam over partially cooled crust and then pour chocolate mixture over the jam. Sprinkle the remaining dough over top and then sprinkle with remaining chocolate chips. Return to oven and bake for about 25 minutes. Let cool completely and cut into squares. Easy. Freezes well.
Spiced Tomato Jam
Use as you would a regular fruited jam. Great on English muffins or homemade biscuits. Rich, complex taste.
Tastes like something our grandmothers would have served, sweet spices, cinnamon, cloves and allspice.
Hot Salsa Jam
Hors d'oeuvres idea: serve with cream cheese on a cracker or mix with cream cheese and use as a dip.
Serve on hot dogs or sausages instead of ketchup.
French Dressing with a ZIP!
1/4 cup vinegar
1/4 cup sugar
1/4 cup ketchup
1/4 cup Nordic Farms' Hot Salsa Jam
1 cup canola oil
Blend in blender then refrigerate. Serve on your favorite salad. Also great on fresh garden tomatoes.
Pork Chops with Lemon or Orange Marmalade, or Orange Crush (Made with ginger)
4 top loin pork chops
1 Tbsp. lemon pepper seasoning
2 Tbsp. cider vinegar
1/3 cup Nordic Farms' Marmalade
1) Brush chops with a little oil and sprinkle with lemon pepper. 2) Heat skillet to medium heat, brown well. 3) Lower heat, carefully add vinegar and marmalade. Stir, loosening any brown bits in pan. 4) Add pork chops back to pan, turning once to coat. Serve chops with any sauce remaining.
Banana Raspberry Torte
Mmmm... This is one of my favorites! Bake a banana flavored cake. Layer slices of cake alternately with raspberry jam and cream cheese icing. Finish the decorating with cream cheese and a few fresh raspberries on top for the most delicious torte.
Pancakes or Waffles
Here's a way to replace the same old maple syrup. Try heating one of you favorite berry jams and mixing in a few fresh berries!

Layer slices of pound cake with jam for a splendid easy dessert.
